Not only is this dish beautiful and full of flavor, it's high in lean protein (marinated island cod) and chock full of vegetables and fiber for a happy gut such as our Sweet & Sour slaw, roasted corn, black beans, dressings made with Apple Cider Vinegar (ACV) to help lower blood sugar spikes and insulin response, all served over top a bed of brown rice/cauliflower rice mix for lower carbs. Although remember, complex carbs are what we want to stay satiated and stabilize blood sugar, further lowering inflammation. We've thought of it all with this meal! Served with two sauce for extra flavor: a (mango) salsa, and a Greek Yogurt lime creme sauce on the side.
