Every time I make this soup, I'm amazed at how the simple lineup of ingredients can come together to produce such a satisfying and gorgeous soup, a hearty chopped lamb pieces simmered in a rich a vegetable broth with chickpeas, potato, spinach, carrot, celery, garlic, and onion. Served w/chef's choice of gluten-free biscuit or rice.
