Pork, Ginger, Seasonal Squash Stir-fry
This fall inspired recipe adapted from Better Homes & Garden is healthier than takeout and the perfect way to enjoy fall produce! First, we'll make a gluten-free stir-fry sauce with savory ginger, garlic, balsamic, tamari, curry, and a pinch of brown sugar -- then, we'll marinate the pork and slow simmer seasonal squash and green beans in it as they brown up into perfection. Served over a bed of season brown rice.
